Things at work are really busy right now as we prepare to open a new exhibition in two weeks. I knew today was going to be a long day so when I got up this morning, I decided to do 2 quick rounds of my All About Arms and Abs circuit workout since I wouldn’t be home until 9 p.m. It felt good to check a workout off my list so early in the day!
I also packed myself a dinner to take with me so I didn’t end up falling prey to the extra cheesy paninis in the cafe at work later. While this terrible picture I tried to snap covertly in the break room this evening doesn’t do it justice, my impromptu dinner creation was really tasty! I threw together brown rice, chick peas, feta cheese, and roasted zucchini, onions and sweet corn with a quick lime vinaigrette: 2 Tablespoons olive oil, 1 Tablespoon lime juice, a tiny pinch of cumin and ground coriander, salt and pepper.
Before packing it up, I layered the bottom of my Tupperware container with a handful of baby spinach, and then shoveled my rice mixture on top. When I finally had a minute to eat tonight, I topped it with a little avocado just because avocado makes everything awesome. The result was a very easy, yummy and healthy dinner. I’ll be making this again soon.
When I arrived home, Aaron had a mini vanilla shake waiting for me from Sonic and boy did that hit the spot after a long day! After polishing off every last drop of the milkshake, I took a quick walk around Vanderbilt’s campus, just to stretch my legs after sitting at my computer all day long. It was a beautiful night and the campus was so quiet and serene. It was the perfect end to my evening.
Now its off to bed because I’ve got another day just as long as this one coming up tomorrow!
